Chocolate Zucchini Cake (Tutu's)

I have been getting requests for my recipe.  Found it years ago in an Oregon cookbook.  I don't have a picture as I have not made it yet this year but am going to give you the recipe anyway.   It is good!

2 1/2 Cups Flour
1/4 Cup Cocoa
1 tsp. soda
1 tsp. salt
1/2 Cup Butter (I never said it was low cal  )
1/2 Cup Oil
1 3/4 Cups Sugar
2 Eggs
2 Cups Grated Zucchini
1 tsp. Vanilla
1/2 to 3/4 cup chocolate chips
1/2 to 3/4 cup chopped nuts
1/2 cup buttermilk

Heat over to 325D.

Sift together flour, cocoa, soda and salt; set aside.  Cream butter, oil  and sugar together.  Add eggs and beat well.  Mix in zucchini.  Add vanilla, nuts and chocolate chips.

Alternately add dry ingredients and buttermilk, mixing after each addition.  Pour into greased and floured 9 x 13 inch pan.  Top with extra chocolate chips and nuts.

Bake for 50-60 minutes or until done (can test with wooden skewer or toothpick).

Don't have buttermilk?  This will work!

Making a recipe that calls for buttermilk? Use this simple substitute, and you won't need to buy any:
Prep Time: 5 minutes
Total Time: 5 minutes
Ingredients:
  • Milk (just under one cup)
  • 1 Tablespoon white vinegar or lemon juice
Preparation:
1. Place a Tablespoon of white vinegar or lemon juice in a liquid measuring cup.
2. Add enough milk to bring the liquid up to the one-cup line.
3. Let stand for five minute. Then, use as much as your recipe calls for.

  1. I have found another recipe that has a little bit less fat but tastes almost as good. I used chia gel (a paste made from chia seeds and water) to replace half of the oil, and nobody noticed a thing!
